Spicy Corn Salsa

Summer will be over before we know it, so let’s take advantage of all of the delicious produce and make this spicy corn salsa! It uses simple ingredients like corn off the cob, bell pepper, cilantro, jalapeño, red onion and lime juice. Plus, it takes only 15 minutes!

This salsa is made so flavorful, not only by using fresh produce, but also by using raw corn! You can definitely use canned or frozen corn, but I have found the best flavor comes from corn taken right off the cob. It does not require cooking, once you shuck the corn it is ready to eat. Letting the mixture rest for a few minutes will give the corn a chance to soak up some lime juice and all of the other flavors as well.

I use a whole jalapeño in this recipe, but if you would like it to be more spicy then add more, or add your favorite peppers. Habanero chilis or Serrano peppers would go well in this recipe-if you can handle a lot of heat!

My two favorite ways to enjoy this is with either grilled vegetables, or sprinkled over a big green salad with some avocado! Leave a comment and let me know how you enjoy it!

Corn salsa goes great on burritos, quesadillas, eggs, toast, and enchiladas!

Serves: roughly 5 cups of salsa
Ingredients
  • 4 large ears of fresh corn
  • ½ orange bell pepper
  • 1 jalapeño (or more if you like it really spicy)
  • ¼ red onion
  • ½ bunch of cilantro
  • juice from 2 limes
Instructions
  1. Wash the bell pepper and jalapeño and peel the red onion. Dice them along with the cilantro and put in a large mixing bowl.
  2. Shuck the ears of corn and wash the little strings off them under some cool water. Place the corn on a cutting board and cut a strip of corn off lengthwise. (see picture above) Rotate the cob so the flat side, where you cut off the strip, is face down. This will prevent the cob from rocking while you cut and keep the kernels from flying everywhere. Continue to cut and rotate until all of the corn has been cut off of the ears. Add the corn to the mixing bowl.
  3. Add the lime juice to the mixing bowl and mix all of the ingredients together. Let rest for 5 minutes before digging in to let the flavors meld together. Enjoy!

Roasted Tomatillo And Garlic Salsa

This roasted tomatillo and garlic salsa is deeply flavorful and takes only 25 minutes to make! Its ingredients are very simple, just tomatillos, garlic, tomatoes, onion, cilantro, lime, garlic powder, and salt. It is delicious on just about everything savory such as, breakfast burritos, quesadillas, eggs, tacos, you name it! Give it a try today and put some of those summer tomatoes and tomatillos to the test.

This salsa is not a spicy salsa at all. Instead, it is packed full of flavor from roasting the garlic and tomatillos and adding lots of cilantro, lime, and even more garlic. If you are someone who enjoys a little kick in their salsa (I definitely do), you can add some jalapeño or chili pequin and roast them with the other ingredients.

Roasting is one of my favorite ways to add flavor to any dish. It is what makes this salsa taste so amazing, and not simply like tomatoes. Roasted tomatillos are a staple in many salsa and sauce recipes including salsa verde! These little green vegetables look almost like tomatoes but are wrapped in a green paper-like shell. They are one of my favorite ingredients, so if you have never tried them before, I would definitely recommend using them.

 

*Notes*


  • I added chopped cilantro at the end, but if you like a really smooth salsa you can blend it with the other ingredients until it becomes your desired consistency.
  • To create the chips in the last picture, I simple cut up some corn tortillas, tossed them in oil and salt, and baked them at 350 degrees for about 15 minutes. They make amazing tortilla chips in a pinch!

Serves: Roughly 5 cups
Ingredients
  • 8 tomatillos
  • 7 medium cloves of garlic
  • 6 tomatoes
  • ¼ white onion
  • 1 bunch of cilantro
  • juice from 1 lime
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
Instructions
  1. First prepare the vegetables so they are ready to go. Peel, wash, and quarter the tomatillos. Peel the garlic, wash the tomatoes, and peel and chop the onion.
  2. Heat a large skillet over medium high heat. Place the quartered tomatillos on the skillet and cook for about 10 to 15 minutes flipping occasionally so they will cook on all sides. The tomatillos are done when their bright green color has faded, they have turned mushy, and some juice started to leak out into the pan. In the last 2 or 3 minutes of cooking time, add the peeled garlic to the pan. It only needs to cook briefly as garlic can burn quickly. Remove from heat immediately when done cooking.
  3. In a large blender, add of the ingredients except the cilantro. Blend the salsa until it is at your desired smoothness. I like to leave mine a little chunky, but that is just my preference. Transfer the salsa to a large bowl. Finely chop the cilantro and stir it in to the salsa. Serve immediately!

15-Minute Strawberry Jam

This 15-minute strawberry jam is one of the most delicious things to come out of my kitchen. Needing only 5 ingredients and ten minutes of cooking time, it is simplicity at its finest! When I make it, you can find me *literally* eating it out of the jar with a spoon. It also is amazing on waffles, pancakes, peanut butter and jelly sandwiches, bagels, and ice cream!

I love making my own jam because it tastes like actual strawberries and not artificial strawberry flavor, and is way healthier because you can control the sweetener. It comes together so quickly its barely any work, and the flavor is SO worth it.

The chia seeds are what give it a jelly-like texture and thickness and they provide extra fiber, and healthy fats, win-win! However, if you prefer to have a smooth jam, then simply blend the jam mixture after it has cooled a bit.

Serves: 3 cups
Ingredients
  • 3 cups chopped strawberries
  • 2 tablespoons chia seeds
  • ⅓ cupmaple syrup
  • 2 tablespoons lemon juice
  • ¼ cup water
Instructions
  1. Add all of the ingredients to a small saucepan and turn the stove to medium high heat.
  2. Mash the berries with a potato masher or large cup while they cook. Bring the berry mixture to a simmer and cook for about 10 minutes or until it thickens.
  3. Remove from heat immediately and let cool before storing it in an airtight container.
  4. Should keep well for one week!

done in about 30 minutes. 
To get extra crispy fritters, I use a simple method of wringing out the moisture from the shredded potatoes  and zucchini.
